Romance Writers Weekly ~ Watermelon Salsa

Welcome back fellow readers! It’s been a long time since I’ve been able to join. I’ve been coaching swimming and it’s been crazy busy. The swimmers have been doing well but the hours are long. We had a 4 day break which was so nice!

Today we are asked: Did you celebrate the 4th of July? Care to share a recipe? What’s the favourite dish at your celebration and why?

This year was very low key for us. My mom’s birthday was on Canada Day on the first, so we had a fun party for her. Then we went to my in-laws on the third for a walk and a BBQ and board games. So on the fourth we slept in, I made blueberry scones and took the dog for a walk. My parent’s neighbours had us over for a BBQ and afterwards we went to a local high school and watched the fireworks. I think the kids loved watching the fireworks.

For the past six or seven years I’ve made a watermelon salsa for the 4th. It’s really, really good! I found the recipe a while back and every time I make it, it always gets compliments. Here’s the recipe, I hope you enjoy!

  • 4 cups diced seedless watermelon
  • 1 cup diced red onion (about half a medium red onion)
  • 2/3 cup chopped fresh cilantro leaves
  • 1/2 cup chopped fresh mint leaves
  • 1–2 jalapeno(s), seeded and finely diced (add more/less to taste)
  • zest and juice of 1 lime

Toss all ingredients together until combined.  Serve immediately with chips or your favourite item to dip, or cover and refrigerate for up to 2 days.

My favourite dish on this holiday is any kind of dip. I love dips and love to try new ones or have the same old ones like seven layer dip. This watermelon dip that I found was because I wanted to find and try a new dip and we had a huge watermelon.
