Welcome to the 100 degree heat wave we are having! Whew, it is sooo hot. I’m good with 75-80, once it gets hotter than that, it’s hard for me to do anything outside. The good thing is we’ll get a couple of days like this now, in the middle of summer and at the very end, otherwise we stay in the 90’s. So it’s perfect weather for BQQing because you definitely don’t want to cook anything in your kitchen and make the house hotter. We do a lot of outdoor cooking when it gets this hot. That is what our topic is about today:

Oh I definitely love BBQ’s! They are my favourite type of summer get together. Friends bring a different dish and we all spend time together and enjoy the day. One recipe that I make and bring to each BBQ is watermelon salsa! It is cool refreshing and healthy. You can’t stop eating it, it’s so delicious. Here is the recipe:
Watermelon Salsa
- 4 cups diced seedless watermelon
- 1 cup diced red onion (about half an onion)
- 2/3 cup fresh chopped cilantro leaves
- 1/2 cup fresh chopped mint leaves
- 1-2 jalapenos seeded and finely diced (add more or less for taste)
- zest and juice of one lime
- Mix all ingredients together. Serve immediately or cover and store in fridge for 2 days.
Let me just tell you, this salsa is so simple, fresh and amazing. I usually bring along some sort of chips to eat along with it. There is usually no leftovers for me to bring home, so I always have to make more. I hope you enjoyed this recipe!
