Today the marvelous Brenda Margriet asks us to share some dinner recipes:

Recipe Swap time! Share your favourite dinner recipe. Can be as easy or complicated as you like.

We love tacos around here so I’ll share a recipe for shrimp tacos!

Shrimp Tacos

Ingredients

  • Olive Oil
  • 1 pound of shrimp
  • 2 T Lime Juice
  • 2 t Cumin
  • Tortillas or Boston Lettuce
  • 1 Mango
  • 1/2 Green Onion, Chopped
  • 2 T cilantro, Chopped
  • 1 Jalapeno, Chopped
  • 1 T lemon Juice
  • 1/4 cup Chopped Red Bell Pepper
  • Salt and Pepper
  • Shredded Cheese of Your Choice
  • Avocado, Sliced

Directions:

  1. Combine a couple splashes of olive oil, lime juice and cumin.
  2. Thread shrimp on skewers and season with salt and pepper.
  3. Brush shrimp with mixture.
  4. Grill until cooked.
  5. Roughly chop the shrimp (if desired)
  6. Make mango salsa (combine the mango, green onion, cilantro, jalapeno, lemon juice, red bell pepper) Mix the salsa ingredients together and let sit.
  7. Put together your tacos; get your tortillas or boston lettuce, add shrimp, cheese, mango salsa and avocado slices.
  8. Enjoy!

I hope you enjoy these shrimp tacos! I usually make mine with some sort of chipotle mayo that I make from scratch and it is delicious but I’ll save that for next time.
