Recipe Swap time! Share your favourite dinner recipe. Can be as easy or complicated as you like.
We love tacos around here so I’ll share a recipe for shrimp tacos!
Shrimp Tacos
Ingredients
- Olive Oil
- 1 pound of shrimp
- 2 T Lime Juice
- 2 t Cumin
- Tortillas or Boston Lettuce
- 1 Mango
- 1/2 Green Onion, Chopped
- 2 T cilantro, Chopped
- 1 Jalapeno, Chopped
- 1 T lemon Juice
- 1/4 cup Chopped Red Bell Pepper
- Salt and Pepper
- Shredded Cheese of Your Choice
- Avocado, Sliced
Directions:
- Combine a couple splashes of olive oil, lime juice and cumin.
- Thread shrimp on skewers and season with salt and pepper.
- Brush shrimp with mixture.
- Grill until cooked.
- Roughly chop the shrimp (if desired)
- Make mango salsa (combine the mango, green onion, cilantro, jalapeno, lemon juice, red bell pepper) Mix the salsa ingredients together and let sit.
- Put together your tacos; get your tortillas or boston lettuce, add shrimp, cheese, mango salsa and avocado slices.
- Enjoy!
I hope you enjoy these shrimp tacos! I usually make mine with some sort of chipotle mayo that I make from scratch and it is delicious but I’ll save that for next time.
