January is often when we reset our wellness goals. Share the recipe for a quick and healthy winter weather meal.
I came across this amazing roasted red pepper and tomato soup all made on a cookie sheet. It was amazing! So easy with just three main items to clean up! You need:
- Cherry tomatoes
- Peppers (big or small) cut up
- Boursin cheese
- 5/6 cloves garlic
- onion
- salt/pepper to taste
- cottage cheese
- bacon (if you want)
- olive oil drizzle
Take the tomatoes, peppers, boursin, garlic, onion and put it all on the cookie sheet. Drizzle with olive oil and cook for 30 min at 350.
After it’s all tender and cooked, put everything into a blender add the cottage cheese and blend until smooth and creamy.
Pour the soup into a bowl and add the cooked bacon crumbles on top.
It’s super easy, super delicious and high in protein and vegetables. This recipe is definitely a keeper, it’s healthy and delicious!
