Happy Thanksgiving to all my Canadian friends and family! When we lived in Canada I really enjoyed having Thanksgiving in October. It didn’t make the holidays seem so jammed packed. I love this time of year when the weather gets cooler. It’s the perfect time for sweaters, and soups!

As the weather gets cooler in Northern British Columbia, I tend to make more stews and casseroles and soups. Share your favourite cold weather meal recipe!
I love to make soups when the weather grows cooler! We like to use the slow cooker a lot because it’s easy, you put all your ingredients in and don’t have to worry about it until dinner time. I have a great recipe for kale soup, it’s not slow cooker, but it’s super easy!
Sausage Kale Soup
- Chicken sausage 8-12 oz (saute first, or already cooked sausage.)
- 1 can White beans not drained
- 3 cups chicken broth 24 oz
- 1 14 oz can fire roasted tomatoes
- 6 cups kale with stems cut off
- Add spinach if desired
- Parmesan to top
- Heat all ingredients in big pot except kale.
- After soup is warmed to your liking, add kale until wilted.
- Pour into bowls and add parmesan.
Be prepared to enjoy a couple of bowls!
This is a delicious soup and one one I know you all will enjoy.
