First week into not coaching and I’ve had no time to write! Hopefully that will change, starting with this weeks blog hop!

Welcome to the blog hop! We have a blog hop going on each week. All of us authors get asked a question and we respond, hopping from one person to the next. If you missed what the amazing Leslie Hachtel had to say just click and pop back. Today’s question comes from Carrie Elks and she talks BBQ: It’s Barbecue Season. Let’s share some recipes – food or drink – that make outdoor eating fun!

It’s a good thing my husband loves to barbecue! We have so many great recipes we use during the summer, fall, spring and sometimes even in the winter. There has been a few times where we dug the BBQ out of the snow just so we could use it. Now that we’ve moved to California we can BBQ anytime we want!

Tonight we made a delicious fajita stuffed chicken with a side of grilled corn. Sauté onions, red pepper and green pepper, add spices. Put pepper mixture in bowl and add pepper jack cheese, cheddar cheese and boursin cheese, mix up. Season your chicken and cut a large slice in it. Add cheese/pepper mixture to the inside of the chicken. Take out to the BBQ and grill up! For the corn we mixed butter and cayenne and spread it all over the corn and grilled away. I have provided a picture of it. It was SOOOO tasty!!! IMG_3299

For other delicious grilling items we’ve done: stuffed turkey burgers with sweet potato fries, pork chops with apple/pear and goat cheese, steaks of course! with mushrooms, twice baked potatoes, cedar plank salmon with lemon and brussels sprouts.

Oh WOW, I could go on and on and on. I loved barbecuing. It is my favourite meal because it’s always so tasty and there is minimal clean up!

Last time I was at Chapters I saw a BBQ cook book and it was a cook everything on the barbecue. Breakfast, appetizers, lunch, dinner, desserts, everything! I should have bought it then but I didn’t and now I regret not being able to see all the yummy things I could have cooked. I will have to keep looking for it.
